Vegan Tofu Meatballs

If you've followed my journey, then you know Tofu is one of my favorite vegan proteins.
Tofu is a great option for vegans or anyone looking for a healthy source of plant-based protein. Nasoya's Super Firm Organic Tofu has 14g of protein per serving. It's vacuum packed & pressed, so no pressing required.
Nasoya's tofu is made with simple, organic and clean ingredients which is something that is super important to me.
It can be used in a wide range of recipes from desserts to snacks to main courses.

I recreated one of the childhood dishes my Mom used to make all the time, Dominican Meatballs, using America's Favorite Tofu, Nasoya.
Here’s the recipe:
Ingredients
1 pack of Nasoya Super Form Organic Tofu
1 cup of mushrooms
3 Garlic cloves
1/2 red onion
1/4 red bell pepper
1/4 green bell pepper
1 handful of cilantro
1/4 liquid aminos
1 tablespoon of corn starch
1 tablespoon of nutritional yeast
1.5 cups of breadcrumbs
Pinch of salt, pepper, coriander
Instructions
Step 1: In a food processor blend all ingredients with the exception of the tofu and the breadcrumbs.
Step 2: Taste the seasoning and add more salt or pepper if necessary. Add the tofu to the mix & blend.
Step 3: In a large bowl add the breadcrumbs & then the tofu blend. Mix it well.
Step 4: Form into balls and air fry for 15-16 minutes at 370 degrees ( turn meatballs halfway through)
Notes:
*If you’re using an oven, bake at 370 degrees for about 30-35 minutes (turn halfway through).
*Optional: Use olive oil spray on Tofu meatballs before baking/air-frying
